The Art of the Shuck
There's something deeply satisfying about opening a fresh oyster. It's a small ritual — a moment between you and the sea. And while it might look intimidating at first, shucking is a skill anyone can learn with the right tools and a little patience.

What You'll Need
- An oyster knife — short, sturdy, and blunt-tipped. Never use a regular kitchen knife.
- A thick kitchen towel or shucking glove — to protect your hand and grip the oyster.
- Fresh oysters — kept cold until the moment you shuck them.
- A bowl of ice — to serve them on once opened.
Step-by-Step: How to Shuck an Oyster
1. Hold the oyster securely
Fold a thick kitchen towel and place the oyster cup-side down (the rounded, deeper side facing down). Grip it firmly with the towel — this protects your hand and keeps the oyster stable.
2. Find the hinge
Look for the narrow, pointed end of the oyster — that's the hinge. This is where your knife goes in.
3. Insert the knife
Place the tip of your oyster knife into the hinge. Apply firm, steady pressure and wiggle the knife gently side to side — not up and down. You're not prying; you're working the knife into the seam.
4. Twist and pop
Once the knife is seated in the hinge, twist your wrist to pop the shell open. You'll feel and hear a small release. Don't rush this step.
5. Slide and sever
Run the knife along the inside of the top shell to sever the adductor muscle — the small muscle holding the shell closed. Remove the top shell carefully to avoid spilling the liquor (the natural brine inside).
6. Free the oyster
Slide the knife under the oyster to cut the bottom adductor muscle. The oyster should now sit freely in its shell, surrounded by its liquor.
7. Serve immediately
Place on a bed of ice and serve right away. A squeeze of lemon, a drop of mignonette, or simply as-is — the choice is yours.
